Lime

The hardest, sharpest member of the citrus family, the lime is incredibly versatile. Its strong, intense flavour and vibrant colour is preserved in the freeze-drying process, making it the perfect ingredient for a broad range of applications.

The lime’s sourness and bitterness make it the perfect pairing with sweet flavours – the caramel in cola, the condensed milk in key lime pie, or butternut squash. Add freeze-dried lime pieces to savoury meal components, such as rice or couscous, to give a citrus flair. Introduce it in confectionary applications, such as dark chocolate inclusions.
