Romaine Salad with Sun-Dried Tomato Seed Topper and Homemade Ranch Dressing

For the Salad
- 200g (7oz) Romaine lettuce, chopped
- 150g (5.3oz) Red bell pepper, sliced thinly
- 50g (1.8oz) Red onion, thinly sliced
- 30g (1oz) Chaucer’s Sun-Dried Tomato Seed Topper (or any of the Chaucer Baked Salad Companions)
For the Homemade Ranch Dressing
- 120g (4.2oz) Mayonnaise
- 120g (4.2oz) Sour cream
- 15g (0.5oz) Lemon juice
- 4g (0.14oz) Dried dill
- 4g (0.14oz) Garlic powder
- 2g (0.07oz) Onion powder
- 2g (0.07oz) Dried parsley
- 25g (0.8oz) Milk (adjust for desired consistency)
- Salt and pepper to taste
Method
Make the Homemade Ranch Dressing

Step 1
In a medium bowl, whisk together the mayonnaise, sour cream, and lemon juice until smooth. -
Step 2
Stir in the dried dill, garlic powder, onion powder, and dried parsley. -
Step 3
Season with salt and pepper to taste. -
Step 4
Adjust the consistency with milk, adding a little at a time until you reach your desired thickness.
Assemble the Salad

In a large salad bowl, combine the chopped romaine lettuce, sliced red bell pepper, and red onion. -
Step 2
Toss gently to mix.
Serve

Drizzle the homemade ranch dressing over the salad. -
Step 2
