Its bright yellow colour looks great in buttercream and confectionary, and the ingredient also works well as a component in dishes such as a coronation-style dry marinade for chicken. Perfect pairings include spices, such as cinnamon and cumin, as well as chocolate. Freeze-dried apricots are also great with pork and lamb, as well as goat’s cheese.
