Broccoli Cheddar Soup

Ingredients

  • 60g Butter
  • 40g Chopped Onion
  • 30g Flour
  • 60g Chaucer Freeze-Dried Broccoli
  • 240g Half-and-half cream
  • 240g Low-sodium chicken stock or broth
  • 8oz Broccoli, chopped into bite size pieces
  • 120g Carrot, julienned
  • 10g Nutmeg
  • 8oz Grated sharp cheddar cheese
  • Salt and pepper to taste

Method

  • Step 1
    Melt the butter and sautee the onions in the butter until soft. Sprinkle the flour over the mixture. Cook and stir over medium heat for 1-2 minutes.
  • Step 2
    Whisk in the freeze-dried broccoli, half & half, and chicken stock. Bring to a boil, then reduce heat to medium.
  • Step 3
    Add the broccoli and carrots. Cook over medium-low heat for 20-25 minutes or until the broccoli and carrots are tender.
  • Step 4
    Add salt and pepper. Return to low heat and add the cheese. Stir in the nutmeg.

Other Ingredient Suggestions

This recipe can be elevated with some Chaucer Spinach or Kale, and Chaucer Onion may be used instead of fresh for convenience.
