Ingredients
- 60g Butter
- 40g Chopped Onion
- 30g Flour
- 60g Chaucer Freeze-Dried Broccoli
- 240g Half-and-half cream
- 240g Low-sodium chicken stock or broth
- 8oz Broccoli, chopped into bite size pieces
- 120g Carrot, julienned
- 10g Nutmeg
- 8oz Grated sharp cheddar cheese
- Salt and pepper to taste
Method

Step 1
Melt the butter and sautee the onions in the butter until soft. Sprinkle the flour over the mixture. Cook and stir over medium heat for 1-2 minutes. -
Step 2
Whisk in the freeze-dried broccoli, half & half, and chicken stock. Bring to a boil, then reduce heat to medium. -
Step 3
Add the broccoli and carrots. Cook over medium-low heat for 20-25 minutes or until the broccoli and carrots are tender. -
Step 4
Add salt and pepper. Return to low heat and add the cheese. Stir in the nutmeg.
