Tomato Soup with Natural Croutons

Ingredients

  • 800g or (28oz) Canned whole tomatoes
  • 150g (5.3oz) Medium onion, finely chopped
  • 4g (0.14oz) Minced garlic
  • 27g (0.95oz) Olive oil
  • 500g (17oz) Vegetable or chicken broth
  • 2g (0.07oz) Dried basil
  • 2g (0.07oz) Dried oregano
  • 2g (0.07oz) Sugar
  • 100g (3.5 oz) Heavy cream (optional, for a creamy version)
  • 100g Chaucer Natural Croutons (or any Chaucer Baked Croutons)
  • Salt and pepper to taste

Method

  • Step 1
    Heat olive oil in a large pot over medium heat.
  • Step 2
    Add the chopped onion and cook until softened, about 5 minutes.
  • Step 3
    Stir in the minced garlic and cook for another minute until fragrant.
  • Step 4
    Add the canned tomatoes (with their juices) to the pot. Use a spoon or spatula to break up the tomatoes.
  • Step 5
    Pour in the vegetable or chicken broth.
  • Step 6
    Stir in the dried basil, oregano, sugar, salt, and pepper.
  • Step 7
    Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes to allow the flavors to meld.
  • Step 8
    If using, stir in the heavy cream and heat through.
  • Step 9
    Use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches and blend until smooth. Return the soup to the pot.
  • Step 10
    Ladle into bowls and top with Chaucer Natural Croutons.
