Ingredients
- 800g or (28oz) Canned whole tomatoes
- 150g (5.3oz) Medium onion, finely chopped
- 4g (0.14oz) Minced garlic
- 27g (0.95oz) Olive oil
- 500g (17oz) Vegetable or chicken broth
- 2g (0.07oz) Dried basil
- 2g (0.07oz) Dried oregano
- 2g (0.07oz) Sugar
- 100g (3.5 oz) Heavy cream (optional, for a creamy version)
- 100g Chaucer Natural Croutons (or any Chaucer Baked Croutons)
- Salt and pepper to taste
Method

Step 1
Heat olive oil in a large pot over medium heat. -
Step 2
Add the chopped onion and cook until softened, about 5 minutes. -
Step 3
Stir in the minced garlic and cook for another minute until fragrant. -
Step 4
Add the canned tomatoes (with their juices) to the pot. Use a spoon or spatula to break up the tomatoes. -
Step 5
Pour in the vegetable or chicken broth. -
Step 6
Stir in the dried basil, oregano, sugar, salt, and pepper. -
Step 7
Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes to allow the flavors to meld. -
Step 8
If using, stir in the heavy cream and heat through. -
Step 9
Use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches and blend until smooth. Return the soup to the pot. -
Step 10
Ladle into bowls and top with Chaucer Natural Croutons.
