Lingonberry Pie

Ingredients

  • 60g Butter
  • 130g White sugar (for crust)
  • 180g Flour
  • 6g Baking powder
  • 1 Egg
  • 120g Chaucer Freeze-Dried Lingonberries 
  • 60g Chaucer Freeze-Dried Blueberries
  • 100g Sugar (for filling)
  • 15g Cornstarch
  • 80g Oatmeal
  • 100g Sugar (for topping)

Method

  • Step 1
    Preheat oven to 350 Fahrenheit (76C)
  • Step 2
    Mix softened butter and sugar for the crust. Add flour, baking powder and egg and quickly mix to form a dough.
  • Step 3
    Press the dough on the bottom and sides of the pie dish.
  • Step 4
    Combine filling ingredients and mix well. Spread the filling over crust.
  • Step 5
    To make topping: Combine oatmeal, sugar and vanilla sugar; sprinkle the mixture on top of the filling and top with butter cubes.
  • Step 6
    Bake in the preheated oven for 25-35 minutes.
