Pomegranate Bruschetta

Ingredients

  • 75g Sugar
  • 60g Pomegranate juice
  • 30g Chopped fresh basil leaves
  • 120g Chaucer Freeze-Dried Pomegranate seeds
  • 1 Thin baguette
  • 8oz Low-fat cream cheese
  • Balsamic glaze for garnish

Method

  • Step 1
    Preheat oven to 350 Fahrenheit (176C).
  • Step 2
    Place baguette slices on prepared pans.
  • Step 3
    Bake for 14-18 minutes or until golden on top.
  • Step 4
    Mix sugar, pomegranate juice, chopped basil, and freeze-dried pomegranate in a medium-sized bowl.
  • Step 5
    To assemble bruschetta, whisk cream cheese until soft.
  • Step 6
    Spread cream cheese on each crostini.
  • Step 7
    Top each baguette with a generous scoop of pomegranate relish mixture.
  • Step 8
    Garnish with basil and balsamic glaze.
