Blueberry & Brie Cheese Sandwich with Balsamic Glaze

Ingredients

  • 1 Panini Roll or Thick Sliced White Bread
  • 20g (0.7 oz.) Butter (If using White Bread)
  • 40g (1.4 oz.) Mayonnaise
  • Few Leaves of Arugula
  • 60g (2.1 oz.) French Brie Cheese, Sliced
  • 15g (0.5 oz.) Chaucer Blueberry Pieces
  • 40g (2.8 oz.) Balsamic Glaze
Other ingredients suggestions

Chaucer sliced cranberries would work really well instead of Chaucer blueberries, and swap the Brie for a creamy blue or any other white cheese.

Method

    Brush the outer slices of white bread with the butter. (This isn’t necessary if using a panini roll)

    Spread the inside of one of the bread slices with mayonnaise
  • 3
    Arrange the arugula leaves on the top of the mayo
  • 4
    Arrange the sliced Brie on the arugula leaves
  • 5
    Spread the rest of the mayo onto the other piece of bread, and scatter with the blueberry pieces

    Carefully place the 2 pieces of bread together, with the blueberries down on to the cheese
  • 7
    Place carefully on a panini toaster and grill until golden and oozing
  • 8
    Serve with more leaves and drizzle with the balsamic glaze

Notes:

For a nutty addition try adding 20g (0.7 oz.) Walnut Pieces into the sandwich.
